We started our series of new origins with this special coffee from Finca La Maria in Colombia. 
The farm, owned by Latorre & Dutch, is located in Villamaría, Department of Caldas, Colombia. This region is famous for its tradition of coffee growing. The farm has a unique microclimate with steep volcanic slopes and a good balance between heat and rain.
The cherries go through the "Fermentum Naturalis" process in which they are first washed and then laid out on African beds to dry. There they are sprayed with a "cocktail" of microorganisms beneficial to the fermentation of the coffee and then slowly dried to the desired moisture content.
This terroir and process result in a great cup profile of red berries, ripe cherries, brown sugar, honey, very sweet, fruity, heavy.
